Actually, for the last few months we have been producing the water we consume in our restaurants and hotels. We have a borehole with a pump and an osmosis unit that desalinates the sea water, which provides us with all the water for the establishment. We are therefore autonomous in terms of water consumption.
We have also reduced the use of our garbage bags by 30% thanks to the installation of a compost garbage can, which will be used to feed the plants, trees and the aromatic vegetable garden of the restaurant.
Straws have disappeared and have been replaced by ZITA, straw-shaped pasta. Even if they are thrown away into the wild, they can feed insects or fish, or decompose quickly.
Finally, all the mini sprouts and herbs used on the plates come from our neighbor who has just set up a greenhouse and Aquaponie system… the transport of our herbs goes from 7000km to 300 meters !!! We are reducing our carbon footprint!
